Classic Vetkoek

South African Vetkoek aka Fat Cake, crispy outside and warm and fluffy inside filled with minced curry. This is the definition of an oldie but a goodie, and making your own vetkoek is easier than you might think!
Ingredients
- 3 cups sifted cake flour
- 1tsp salt
- 1tbsp white sugar
- 10g yeast
- 1tbsp margarine
- 300ml lukewarm water
- 3tbsp cooking oil
Method
- Sieve Flour, salt and sugar together
- Add yeast
- Dissolve margarine in lukewarm water and add to flour mixture
- Mix well and knead for 15 minutes
- Cover with a cloth and stand in warm place for an hour
- Divide into 8 portions and mould into balls
- Brown in cooking oil until dough calls sound hollow when tapped
- Use towel paper to absorb the excess oil
Serve the vetkoek with mince curry, grated cheese, golden syrup , or apricot jam.
