Bacon Beer Bread

We thought it would only be appropriate to post a braai related recipe today with our Heritage day celebrations! This recipe is perfect for after-braai coals, or to prepare for a hot starter while the meat’s sizzling away.
Ingredients:

250g streaky bacon
500g self-raising flour
1/2 teaspoon salt
2 tablespoons sugar
340ml beer(1 bottle)
1/3 cup water
1 egg, whisked
1 cup grated cheddar
Method:
No preheating today, as this bad boy is going in a potjie over the fire. Get your fire ready and let it burn out, leaving only smouldering coals.
In the meatime, grease a flat bottomed potjie and line the pot with long streaks of bacon.
Next, sift the flour into a large bowl and add the salt and pepper, mixing well. Then add the beer, water and egg into a hole in the middle and combine well.
Add the cheese and pour over the bacon, folding the ends back over.
Rest it on a braai triangle, spreading the coals around it and putting some on the lid.
Bake for one hour over.
Tip: The blade should come out clean when tested in the middle.
