South African Date Squares

Remember your granny making these when you were a little kid? The soft brownie texture, the sweetness of the fruit and the crumble of the biscuit base is sure to take you right back to sunny South Africa. These tasty little delights are quick to make and sure to be a crowd-pleaser.
Ingredients:
1 packet of Marie Biscuits100ml sugar
250g dates – chopped
115g butter
1 whisked egg
1 teaspoon Moirs vanilla essence (you can substitute this with Brandy)
Desiccated coconut to coat
Method:
Empty your Marie’s into a freezer/sandwich bag and crush.
Tip: You can use a rolling pin or sauce bottle to crush them into small pieces.
Put the biscuits aside and add your butter and sugar to a pot on a medium heat. Melt, before adding your dates to the mixture and simmering until soft. Remove it from the heat and let it cool for about 5 minutes.
Add your whisked egg and vanilla (or brandy) and mix well, before adding your crushed biscuits and mixing it through.
Spread your mixture in a lined container and refrigerate for a few hours before cutting them into small squares.
You don’t have to coat them with the coconut, but it adds a nice touch and also prevents them from sticking to each other.
